Stainless steel Alfa Laval vacuum chamber used to extract moisture from product without increasing cooking temperature which may have a detrimental affect.
(ie burning; inversion of sugars etc).

It can also be used be used for cooking of sugar syrups where moisture level needs to be
kept to a miniumum. This is done in conjunction with an Alpha Laval Convap
( a scraper cooker ). This piece of equipment is not included.
The output would depend on product and moisture level that is required.
