Stainless steel Alfa Laval vacuum chamber plus the delivery system. Used to extract moisture
from product without increasing cooking temperature which may have a detrimental affect.
(ie burning; inversion of sugars etc).

It can also be used for cooking sugar syrups where moisture level needs to be
kept to a min. This is done in conjunction with an Alpha Laval Convap (a scraper cooker).
The output would depend on product and moisture level that is required.
